Taramasalata
A fantastic sauce
Taremasalata is a delicious sauce that is brought almost as a welcome in the most traditional taverns, made from fish roe.
Traditionally it is prepared with taramá which are pickled carp roe, although there are varieties of other species, especially cod.
Teramasalata is not Greek, but the recipe is shared with Turks, Romanians, Jews and a bit of all Middle Eastern cultures that overlook the Mediterranean.
The preparation is very simple: the eggs are mixed with lemon juice, onions, garlic and olives and it's done. The color of the sauce is given by the type of roe used: sand colored for carp roe, pink for prawn roe, tending towards white for cod roe.
