Dolmades
Here's another dish Marco is literally crazy about: Dolmates, stewed vine leaves stuffed with rice and spices.
From tradition we can say that a typical Greek spring dish, when the first tender vine leaves begin to grow, when the first spices begin to blossom…Here is a dish that has the flavor of Greek spring! traditionally they are one of the quintessential spring dishes of Greek cuisine.
There is also a version of Dolmates made with rice and small pieces of goat or lamb meat, but honestly neither Marco nor I prefer it.
Well yes, Dolmades is not only a vegetarian dish, but it is also suitable for coeliacs like me. Usually, they are served on a cremina which is actually a sauce specially made for them whose ingredients are: sour cream, fresh cucumbers, fresh coriander, salt, pepper and lemon, so no flour. Frankly, they're also great with tzatziki or Greek yogurt.
