Fava
The Greek sauce of Santorini
Contrary to the name, Fava is not made with broad beans, but with yellow peas typical of the Cyclades islands, very similar to our cicerchie.
This Greek sauce is especially famous in Santorini, where it was born more than 4000 years ago and where there are the best yellow peas in all of Greece.
Marco loves this sauce and so do I. Yes, it is a dish that people with celiac disease like me can easily eat because traditionally no flour is added, but only oil, salt and a little lemon juice.
It is generally served with the ever-present onion and pickled capers.
