Stifado

A god stew

Stifado or Stifatho is a very famous dish in Greece, but its origin is Italian, more precisely Venetian. It was in fact reported during the domination of the Serenissima in Greece.
The stifado usually has two ingredients: the base and the main. The base of the dish is always the same: onions or spring onions; the main can vary pretty much almost with everything.
Indeed we can find stifadi of chicken, lamb, goat, seafood, but the favorite of the Greeks is that of rabbit which I also highly recommend.

The preparation is easy: 50% onions, 50% main ingredient and then tomatoes, various spices including cinnamon and cloves. To lighten the taste of the onion, you will also find potatoes in many stifadi.

This is a dish to taste, maybe not on a warm evening because it is very heavy.
